Red lentil and basmati bake (v)

A simple enough recipe that allows you to use up vegetables in your fridge and baskets, so feel free to improvise, yet the combination below really works well. You will need:

200g Red lentils
120-130g  basmati rice
(Optional: veg stock)
1 small leek
1-2 carrots
1 courgette
5-6 mushrooms
(Optional: 100g butternut squash)
70-1000g feta crumbled 
70-100g grated cheese (edam/mozzarella/cheddar)
Olive oil
Paprika
Salt
Pepper
Parsley or thyme or both
Baking paper

Unfortunately this isn't as economical in terms of pots and pans you'll need as other dishes I have posted but it is definitely worth it. So here goes:

-First you boil the lentils and rice together for about 15 mins. (If you want you can add vegetable stock but it is not at all necessary). Drain excess water.
-As you wait for the above to boil, in a pan add olive oil to your liking (but preferably not less than 5 table spoons). Chop the leek, mushrooms, courgette and carrots and throw them to the pan too for 6-7mins. (I once saw a tip, that because butternut squashes are hard to peel, you can put them in the oven even while you are using it to bake something else. You just leave them there for 10-15mins and they peel very easily. So, I often have butternut squash in my fridge that I had previously baked and just peel and cut as much as I want and add to the food I am preparing)
-Time to preheat the oven at 200°C
- Lay the baking paper on an oven dish. It will be better if the baking paper covers the sides too not just the bottom of the oven tray. (You can use a couple of pegs on each side to keep it from moving while you do the following).
-In it, mix the lentil-and-rice mixture with the vegetables you had in the pan. Add the feta, paprika, salt, pepper, and the parsley or thyme and stir gently so that the ingredients seem spread evenly.
- Sprinkle the grated cheese
-(take the pegs off if you used any to keep the baking paper in place)
-Put in the oven for about 30 mins maximum. Depending on your oven, 25 mins might be enough.
-Take out of the oven and let it cool for 10-15mins before serving.
(As I said, use other vegetables according to your taste. I have once made it with onion, courgette and aubergine but it wasn't as popular as the one above that is a big favourite among the young ones of our household).
