Walnut & Cauli green veg risotto
(Note: This is an one-pot dish I came up with recently and it has been quite popular with both my little and not-so-little food testers. Again, as usual, the actual recipe is according to my family's taste, which means that if you like the vegetables crunchier or mashier you will have to cook less or more respectively. The recipe is pretty simple and you can consider most ingredients optional. Therefore, if you don't like cauliflower you can just skip it or replace it with something that you think would accompany harmoniously the rest of the ingredients).

- 1/2 cauliflower
- 1 medium courgette
- 250 grams green beans
- 7-8 Tbs peas
- 10 Tbs risotto rice
- 1 clove of garlic
- 1 small onion OR 2 tsp granulated dried onion
- 1/2 tsp paprika
- 7-8 Tbs olive oil
- rocket leaves
- 10-15 walnut halves
- 1 1/2 cup milk
- parsley (optional)
- salt
- pepper
This is a one-pot dish. We start with choosing a not-too-tall but rather wide pot with a lid as at some stage you will need to cover and let it simmer.
Start with the olive oil on medium high temperature, add the onion and the garlic, chopped or grated, this is up to you. Then,the cauliflower broken into little florets, the beans, the peas and finally the courgettes. You can also add the parsley at this stage if you wish. Cover for 4-5 minutes and let simmer.
Next add the risotto rice, the milk and 1 cup of water. Do not cover but keep an eye out as the rice will absorb most of the water and milk so you might need to add 1/2 cup more water. It will depend both on the rice and the heat. I had to add 1/2 cup, I used paella rice and had it on medium heat.
Add the salt, pepper, and paprika. Stir a couple
Before you serve, finely chop the rocket and walnuts (I am sure almonds would taste great too). And tah dah! Please don't neglect to tell me how you found it.
tips:
to make this food vegan friendly you can use almond or soy milk
it tastes good without the walnuts and rocket but it might be a bit bland
